I discovered this delightful treat through a video online and was instantly captivated.

The next step is to make the caramel layer. I usually keep the heat low and stir continuously for about five minutes. Then, pour the caramel over the cooled biscuit base. It feels amazing to see the biscuit layer completely covered in caramel—it’s truly refreshing!
Next, slice the bananas and layer them on top, then add a generous layer of whipped cream. Once everything is assembled, cut the pie into serving pieces. The slices should be soft and melt in your mouth, guaranteeing a delightful experience with every bite.
Tips and Tricks
If you like to have a specific timeline (like I do), here’s a schedule for making banoffee pie: Morning: prepare the biscuit base and let it cool. 2 PM: make the caramel and let it cool at room temperature. 4 PM: before your friends arrive, layer the bananas and whipped cream on the pie and refrigerate. 6 PM: take the pie out of the fridge, let it sit for 30 minutes, and then serve.

Ingredients
Biscuit Layer:
- 12 Graham crackers, crushed to make 1 1/2 cups
- 5 tablespoons sugar
- 7 tablespoons salted butter (melted)
Caramel Layer:
- 1/2 cup salted butter
- 1/2 cup brown sugar
- 8 ounces sweetened condensed milk (about half a can)
Bananas and Whipped Cream:
- 2 large bananas, peeled and sliced
- 1 1/4 cups cold heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
Biscuit Layer: Preheat the oven to 350°F. Mix the ingredients for the biscuit layer and press into a 9-inch pie dish. Bake at 350°F for 10 minutes.
Caramel Layer: In a heavy pot, melt the butter and brown sugar over low to medium heat. Set a timer for 5 minutes; stir continuously. Avoid letting it boil vigorously; just a gentle simmer is enough.
Completing the Filling: Add the sweetened condensed milk and stir well. Set a timer for another 5 minutes; gently heat for 3-4 minutes until the color turns a nice brown and the consistency thickens gradually.
Resting Time: Pour the caramel over the cooled biscuit layer—it should be slightly thick but still smooth. Let it sit on the counter for 1-2 hours until the caramel cools and sets.
Whipped Cream: Using an electric mixer, whip the cream with sugar and vanilla until it reaches medium peaks. Once the top is set, layer the bananas on top, add the whipped cream, and finish with a sprinkle of chocolate.
Serving
You can serve this pie at room temperature or chilled. I recommend enjoying it the same day, as leaving it overnight can make it soggy and the bananas will start to brown.
I really enjoy eating it cold, but I wouldn't recommend leaving it overnight because it tends to get soggier. Good luck making this banoffee pie!
