Inside Akal Travel Center, a 24-hour truck stop on the Wyoming high plains, the sizzle of garlic and the fragrant aroma of curry waft through the air. On a chilly, overcast day at the end of January, Ediquis Brown parked his truck at this gas station along Interstate 80, about 20 miles from Laramie.

Brown weaved through aisles filled with candy and quirky souvenirs to reach the counter, placing his order without even glancing at the faded menu. His go-to meal: tandoori chicken, garlic naan, a mango lassi, and two chai teas. Originating from Fort Lauderdale, Brown drives from east to west every week, often pulling 11-hour shifts and eating on the go to keep to his schedule.

Signature Dishes of Akal

Brown is one of dozens of drivers who stop by Akal daily to savor the fragrant naan, golden butter chicken, and biryani garnished with carrots and peas. "We attract customers not just with the cheapest diesel prices but also with our food," says Gurjot Singh, the manager who has been at the stop since 2014. Two years after Mintu Pandher and his wife Amandeep took over the truck stop, all ten staff members relocated from Punjab, India, and now reside in the housing behind the gas station.

The Indian Community in Wyoming

In Wyoming, where less than 2% of the population identifies as Asian, Akal has become a rare hub for Indian cuisine and culture along the I-80 corridor: a bustling Punjabi kitchen next to a row of gas pumps. Right inside, there's even a Sikh gurdwara for staff and anyone wishing to visit or pray.

In a small wooden dining area with four tables, Brown chats with fellow long-haul truck driver Anthony Masonar while waiting for their food to be delivered from the takeout window. Both men usually stop by Akal two to four times a month to refuel and enjoy hot Indian meals, which they believe are tastier and healthier than the fast-food chains that dominate suburban areas.

A Unique Dining Experience

It’s become a routine, a place to savor slow-cooked meals that are hard to find along the highway. "I’m not a fan of Wendy's," Brown says. "This is my place. A spot for fresh, delicious food." The largest group of Akal's customers are Teamsters drivers, who describe this family-run stop as much tidier and more cared for than other chains.

Ron Tucker, a freight driver from Bend, Oregon, who spends over 300 days a year on the road, says he can’t eat out constantly and often cooks in his truck, equipped with a freezer and a Keurig coffee maker. But he makes a special trip to Akal because he knows the butter chicken here is more nourishing than the $12 combo meals he typically finds elsewhere, and it’s well worth the price. "It’s $16," he notes, "so I can’t come here every day, but it doesn’t break the bank."

Vegetarian Options at Akal

Akal also serves a variety of vegetarian dishes, including matar paneer. Chef Kalbinder Kaus prepares between 38 to 45 liters of chai daily. The Interstate 80 corridor through Laramie is notorious for strong winds, snowstorms, and frequent road closures.

As a result, Akal’s business often depends on the weather, especially when the highway near the truck stop is shut down. Bunty Singh is the self-taught chef behind the smooth curries and aromatic tandoori chicken. Ingredients are prepped early and cooked fresh upon order, ensuring each dish maintains its freshness.
