Ingredients and Preparation

The main ingredients are quite simple: all you need is duck (or minced beef or chicken), chili peppers, garlic, and curry paste. If you can’t find free-range duck, ground meat is a great substitute and still tastes fantastic. I usually use about 500 grams of minced meat for this dish.

How to Make Spicy Stir-Fried Duck

If you're using a whole duck or chicken, start by cleaning the meat and singeing off any feathers, just like my mother-in-law taught me. But if you're using pre-minced meat, you can skip this step, which is super convenient. First, stir-fry the meat until it’s completely dry. Then, set it aside, leaving some oil in the pan.


Next, dry roast cumin and coriander seeds in a medium-hot pan for about 30 seconds. After that, grind them into a powder. This will be the key spice that enhances the aroma of your dish.

Mixing Spices and Herbs

This dish absolutely requires 20 Thai chilies and a head of garlic, all crushed together. If you want to tone down the heat, feel free to adjust the amount of chilies to your taste. Adding young galangal to the spice mix will give it a truly unique flavor.
