Among these delicious offerings, I have a special fondness for vinegar pig trotters.

Wherever I travel, I make it a point to seek out restaurants that serve this dish. This time, my journey led me to the Chinatown Complex Food Centre, one of the largest food hubs in Singapore.

Discovering Shen Xi Imperial Soup Group

At this bustling food center, Shen Xi Imperial Soup Group (formerly known as Chef Sham H.K. Vinegar Trotters) stands out for its traditional vinegar pig trotters. Finding this restaurant amidst the sea of eateries wasn't easy, but as soon as I spotted the bright sign, I knew I had arrived at the right place.

The mastermind behind this establishment is Chef Sham, a well-known figure in the culinary world at 79 years old. He was the founder of the famous Lao Huo Tang restaurant chain before opening his own eatery.

Indulging in the Specialty Vinegar Pig Trotters

Upon entering the restaurant, I couldn't resist ordering the signature Gold Medal Vinegar Hong Kong Pig Trotters, priced at 6.80 SGD. Every morning, the restaurant prepares a large pot of this dish to serve throughout the day. When customers place their orders, the trotters are heated in a clay pot before being served.

The steaming hot vinegar trotters were presented to me, and I couldn't help but feel thrilled to see so much meat in the pot. The broth was filled to the brim and fragrant. I eagerly took a spoonful of the broth and was immediately greeted by a delightful tanginess, with herbal notes that awakened my senses. There was a subtle sweetness lurking beneath, balancing the sourness of the broth.

If you’re not a fan of sour flavors, don’t hesitate to drizzle the broth over white rice. While I typically enjoy the broth on its own, I decided to give this method a try this time. The pig trotters were cut into large pieces, yet they were so tender that a gentle nudge with my chopsticks was all it took to separate them into smaller bites. The meat retained just the right amount of chewiness, making it incredibly delicious.

I found it hard to resist dipping the small pieces back into the broth to soak up even more flavor. The skin and fat were equally enticing, melting in my mouth like butter. I didn’t need to chew as hard as I initially feared. If you want skin as smooth as a baby’s, be sure to savor every bit!

The dish was nearly perfect with a braised egg on the side. The egg's insides were slightly dry from being simmered for a long time, but once I drizzled the broth over it, the issue was completely resolved. This dish reminded me of the flavors my grandmother used to create, though the vinegar here is lighter.

Other Must-Try Dishes

Beyond vinegar pig trotters, the menu also features Sesame Oil Chicken, priced at 5.80 SGD. From the first bite, I noticed that the sauce here was a bit thinner compared to other places, yet it still retained the tangy flavor from rice vinegar. To my surprise, the heat from the red chili, just a few slices, added an enticing kick to the dish.

The chicken was made from thigh cuts, tender and juicy, easily pulling apart with a bite. Accompanying it were a few shiitake mushrooms, perfectly soaked in the delicious sauce. The mushrooms acted like little sponges, absorbing all the rich flavors.

Final Thoughts

Shen Xi Imperial Soup Group truly left a lasting impression with their traditional dishes. I will definitely return to enjoy another comforting bowl of vinegar pig trotters. As the saying goes, “The older the ginger, the spicier it gets,” experience truly makes a difference, and this is evident in Chef Sham's dishes.
