- 200g chicken breast, cut into bite-sized pieces
- 1 tablespoon flour or cornstarch
- 1/3 cup cooking oil (I prefer sunflower oil)
- 1 tablespoon minced garlic (about 4 cloves)
- 1/2 cup yellow onion, chopped
- 1/3 cup dried Thai bird's eye chili, fried
- 1/2 cup raw cashews, unsalted
- 1/3 cup fresh red bell pepper, sliced thin
- 1/3 cup banana peppers, sliced
- 1/3 cup green onions, cut into 2.5 cm pieces
Prepare the Sauce
First, you need to prepare the seasoning sauce with the following ingredients:
- 1 tablespoon light soy sauce
- 1/2 tablespoon dark soy sauce
- 1/2 tablespoon oyster sauce
- 1/4 teaspoon ground white pepper
- 1 pinch of salt
- 1 pinch of sugar
- 3 tablespoons broth or water
Mix everything in a small bowl and set it aside.

Cooking the Chicken and Cashews
Start by coating the chicken pieces with flour so that they are evenly covered without clumping together.
Next, in the prepared oil, fry the cashews until they turn golden, then remove them from the pan. Be careful, as cashews brown quickly, so keep an eye on them!
Finishing Touches
In the remaining oil, fry the dried Thai chilies for just 1 minute, then take them out. After that, fry the chicken for about 5 minutes until golden brown, then set it aside.
Now it’s time to stir-fry everything together. Add 1/2 tablespoon of oil to the pan, heat it up, and toss in the garlic, sautéing for about 10 seconds before adding the onions. Once the onions become translucent, add the fresh chilies. If the pan looks dry, add a little water.
