I've toned down the garlic a bit (but there’s still plenty because I adore garlic sauce) and added asparagus to bring in the fresh spring flavors. The chicken is lightly dusted with flour and briefly seared, enhancing the flavor of the broth, cream, butter, and spices.

I like to let the sauce reduce a little before adding the chicken to the pan, then cook the asparagus just until it turns bright green and crisp. This chicken stir-fry truly delivers a tangy zing from the lemon and an aromatic kick from the herbs, but most importantly, it disappears quickly from the dining table. Steps to Prepare Chicken Stir-Fried with Asparagus

The first step is to prepare your ingredients. Smash 4 garlic cloves with the bottom of a cup or a knife blade, and cut the lemon and asparagus into 1-2 inch pieces. I usually cut the asparagus a little larger to keep it crunchy and prevent it from getting mushy in the sauce. Then, filet 2 chicken breasts to create 4 pieces.

Once the butter melts and the pan is hot, add the chicken. Sear the chicken for about 4 minutes on each side until golden brown.

When the internal temperature of the chicken reaches 75°C (165°F), remove it from the pan and lower the heat to medium. Cover it with aluminum foil and set aside. Add 2 tablespoons of butter to the pan with the smashed garlic. Cook until the garlic is golden and fragrant, about 2-3 minutes.

Reduce the heat to low and mix the heavy cream with chicken broth, then pour it into the pan. Stir well to lift the bits of chicken and garlic stuck to the bottom. Simmer and add a teaspoon of dried dill, garlic powder, onion powder, and dried basil. Stir again and let the mixture reduce by about a quarter, stirring gently every few minutes. I simmered the sauce for about 8 minutes.

Finally, return the chicken to the pan along with the chopped asparagus. Let it cook for about 8 minutes, covered. This will help the asparagus cook through and warm the chicken back up. Use a spoon to drizzle the sauce over the chicken and veggies, then add a splash of fresh lemon juice to finish. Taste and season with salt and pepper as needed.
