If you've ever tried sake, you might relate to my experience: holding a bottle of sake for the first time, I was so focused on pouring that I completely forgot about the glass! My dear Japanese friend couldn't help but laugh and reminded me that I should wait for the glass first. Since then, I've had the chance to taste countless types of sake and feel like I've gradually learned to distinguish their unique flavors. One of the most impressive sakes I've encountered comes from Yamaguchi - Yachiyo Shuzo, led by Kumiko Kaba, one of the few female sake artisans in Japan.

A Trailblazing Artisan

Sake is Japan's traditional rice wine, an essential part of the local culture. Kumiko Kaba grew up near the Yachiyo Shuzo brewery, which her family established in 1887. Although she initially had no intention of continuing the family legacy, witnessing many breweries close down due to a lack of successors motivated her to return home and take on this important responsibility.

Interestingly, instead of learning the craft at her family’s brewery, Kumiko chose to hone her skills at Sumikawa Shuzo, a training ground for new sake artisans. She aimed to bring fresh ideas into a field that had become somewhat traditional.

Transforming the Art of Sake Making

In the past, women were often prohibited from entering sake breweries due to beliefs about jealous deities. However, times have changed, and Kumiko is a shining example of this progress. Not only does she craft sake, but she also incorporates modern thinking into her products, with her first sake line, Room, creating a buzz on major sake review forums.

She pays attention to every detail, focusing not just on flavor but also on the design and the moments when sake is enjoyed. For instance, her Dear sake comes in a round gift box with red paper that can be shaped into a rose, adding a special touch for important occasions.

Real Experiences at the Brewery

Kumiko is not just a talented artisan; she is also incredibly friendly when guiding visitors through the brewery. On some occasions, you might even be welcomed by her elderly mother in Kumiko's absence. The brewery is nestled among the lush green rice fields of Yamaguchi, offering a sense of peace and timelessness.

Visitors can cycle around the fields where the rice for sake is grown and join a tour to understand the sake production process from start to finish. After the tour, tasting the sake becomes an even more delightful experience.
