In Seoul, I spotted Dutch ovens showcasing soft-boiled eggs, fried rice, and dumplings. I watched as other guests overlooked the French toast in favor of tamales and tacos from Mexico or enjoyed callaloo and saltfish from Jamaica. The variety of hotel breakfasts reflects how chefs cater to the daily preferences of travelers while connecting them to local cultures.
Last year, I visited The Inn at Little Washington in Virginia, a unique restaurant run by Chef Patrick O’Connell for 48 years, filled with antiques and memorabilia from George Washington. O’Connell serves an enticing eight-course tasting menu that starts with festival-like snacks.

For overnight guests, the meal continues with a delightful breakfast featuring smoked salmon piled atop crispy potato galettes that I still dream about. The Inn makes its own yogurt, served with fresh fruit and homemade granola. My green juice really had some competition: a selection of freshly squeezed juices from local Virginia farms.
