To make this delightful meal from scratch, I had to pound the curry paste and prepare a whole chicken. It may sound complicated, but the results are absolutely rewarding!

Gathering the Ingredients

To cook Thai green curry, you'll need the following key ingredients:

  • A whole chicken, about 1.4 kg
  • 2-3 cups of coconut milk
  • Thai eggplants, Thai basil, red chilies
  • Makrut lime leaves, salt

Making the Green Curry Paste

The curry paste is truly the soul of this dish. It’s a harmonious blend of green chilies, garlic, shallots, galangal, and other ingredients like lime leaves, lemongrass, and shrimp paste. Grinding everything in a stone mortar to extract the essential oils is the most time-consuming part, but the end result will leave you satisfied.

Preparing the Chicken

I chose free-range chicken because it has a firmer, more flavorful meat. The chicken is cut into small pieces for quicker cooking and better absorption of the flavors. While this method may leave a few small bones, they add to the dish's distinctive taste.

Cooking the Curry

Start by boiling water with the curry paste and chicken until the meat is tender. My mother-in-law often adds lime leaves for an extra fragrant touch. Then, pour in the coconut milk and continue cooking until the sauce thickens.

As it simmers, the aroma of lime leaves, coconut milk, and curry paste wafts through the kitchen. The anticipation of enjoying this homemade green curry is truly worth it!
