According to the World Sustainable Tourism Alliance, the hotel industry accounts for 1% of greenhouse gas emissions from food production and 3% of food waste. This issue was also highlighted at the COP30 conference on climate change, which the U.S. boycotted. Participating hotels have committed to offering smaller portions, increasing on-site cooking, frequently replenishing dishes, and measuring waste levels.

Innovative Initiatives

Hilton's 'Green Ramadan' program has been rolled out in 45 hotels across 14 countries, reporting a 26% reduction in food waste on guests' plates by limiting portion sizes and replacing buffets with menu service. A pilot 'Green Breakfast' program at 13 hotels in the UAE has achieved a remarkable 62% reduction in food waste.
