Fu Yuan Minced Pork Noodles has gained a fantastic reputation in Singapore, particularly for its renowned bak chor mee (stir-fried minced pork noodles). I recently had the chance to visit their stall located at Block 201C, Tampines Street 21. It was a drizzly, chilly day—perfect for a steaming bowl of noodles!

Interestingly, Fu Yuan doesn’t have its own dedicated stall but shares space with a Wu Xiang shop. Despite its popularity, the atmosphere is cozy and compact. When I arrived, there were about six people ahead of me in line, and it took only about 10 minutes before it was my turn to order. The staff member was friendly and greeted me with a warm smile.

The Menu at Fu Yuan

I opted for their signature Teochew minced pork noodles (S$5). By the time I returned from getting my drink, my bowl of noodles was ready and waiting for me. I was served a flat bowl of noodles alongside a bowl of broth, and the staff proactively added a small dish of chili sauce and soy sauce for me.

As I began to enjoy my meal, the vibrant color and thickness of the chili sauce made me feel excited. While it was somewhat spicy, the vinegar's tanginess blended beautifully with the meaty flavors of the dish, creating a delightful combination. Inside the bowl, I found meatballs, pork liver, and various pieces of minced pork.

Distinctive Flavors

The pork was incredibly tasty, and each piece of liver added a rich, natural depth to the dish. When paired with the noodles and chili, the vinegar provided an extra layer of flavor. Fortunately, the spiciness was manageable, enhancing the dish without overwhelming it.

The broth was truly special, thick and filled with shredded pork, offering a sweet and rich taste. They didn’t skimp on ingredients, resulting in a robust flavor that complemented the already delicious noodles.

Things to Note

Before heading to Fu Yuan, I had heard many people say that this eatery is worthy of comparison to Tai Hwa. However, after my experience, while the noodles here were delightful, I felt they still hadn’t reached the high standards set by Tai Hwa. Interestingly, I learned that the owner of Fu Yuan previously worked at Tai Hwa.

Meeting the chef at the stall, I could feel his passion for his work, even though he takes just one day off every two weeks. He mentioned that his cooking secrets may have originated from his experience at Tai Hwa. Our brief conversation was warm and sincere, making me eager to return.

Useful Information for Vietnamese Travelers

If you’re planning a trip to Singapore and want to try the stir-fried minced pork noodles at Fu Yuan, prepare to spend about 5 Singapore dollars (approximately 85,000 VND). In Singapore, you’ll need a tourist visa if your stay exceeds 30 days. Flying from Ho Chi Minh City or Hanoi, you can find round-trip tickets starting from about 3,000,000 VND. The best time to visit Singapore is from February to April when the weather is most pleasant.

The dish at Fu Yuan is truly worth trying, not only for its reasonable price but also for its rich flavors and the dedication of the staff.

I will definitely return to Fu Yuan Minced Pork Noodles, not just to savor the delicious food but also to experience the warmth from the wonderful people there.
