My first adventure into the world of lamb was at this quaint eatery, a surprisingly delightful experience. They say that once you try the lamb porridge at Ming Shan in Chinatown Complex Market and Food Centre, you’re bound to fall in love with it. This restaurant has been around for over 40 years, and according to the third-generation owner, the family recipe dates back to 1943, originating from the Thong Chai Medical Institution.

A Time-Honored Secret of 83 Years

The porridge here is prepared using a traditional recipe that has been passed down for 83 years, featuring over 11 types of Chinese herbs and a broth simmered for nearly three hours. The signboard even lists the health benefits of the herbal porridge, claiming it can help with insomnia and boost energy. My knowledge of Chinese characters is limited, but I hope I got that right!

Lamb Porridge with Mee Sua

I decided to try a small bowl of porridge for 6 SGD. Inside, it contained rice noodles, lamb, goji berries, and Chinese celery. The porridge was quite thick, likely due to the noodles, but the flavor was milder than I had anticipated. If you enjoy a subtle herbal aroma, this dish is perfect for you. For me, however, it felt a bit bland.

The rice noodles were pleasantly chewy, a nice change from what I’ve experienced elsewhere. The goji berries added a sweet touch, while the celery helped to balance the porridge's flavor.

Special Lamb Porridge

Next, I opted for the special porridge priced at 10 SGD. This bowl featured large tendons, lamb meatballs, and lamb offal. I also ordered two bowls of white rice (0.70 SGD each) just in case the porridge was too rich!

This time, I skipped the noodles to focus solely on the broth. The porridge had a light sweetness and a strong herbal aroma, but it still lacked the depth of flavor I was hoping for.

The Tasting Experience

The large tendon pieces were a bit challenging to separate, but I managed to pull apart some tendon and meat. The lamb offal was tender and delicious. The lamb meatball was the highlight, leaving me wanting more, but unfortunately, there was only one.

Dipping the lamb into the chili sauce surprised me with its tangy and refreshing spiciness that stimulated my taste buds. I even dipped the meat into soy sauce, creating a wonderfully complex flavor experience.

Final Thoughts

The lamb porridge at Ming Shan isn’t bad; the meat is just as tender as I like it. However, I do think the flavors could be more robust, and the portion sizes could be a bit more generous. If you get a chance to try it, I’d love to hear your thoughts!
