As is my tradition, the moment the weather warms up, I start craving salads. My go-to is Crispy Mashed Potatoes with Greek Tofu. This week, I didn't have any small potatoes or tofu, so I opted for a large potato. After boiling it until soft, I tossed it in the air fryer, smashed it lightly, drizzled some olive oil and salt, and fried it until golden and crispy. I paired it with a bit of herbed yogurt sauce (lactose-free for me), cherry tomatoes, Persian cucumbers, and red onion. Finally, I sprinkled on some toasted pine nuts and feta cheese to finish it off. Absolutely amazing!
