Ingredients for Mishti Doi

To make Mishti Doi, you'll need some simple yet quality ingredients:

  • 1 cup of jaggery (palm sugar) or coconut sugar, plus a little extra for caramelizing on top.
  • 1 can of sweetened condensed milk (about 340ml).
  • 2 cups of whole milk.
  • A pinch of ground cardamom.
  • A pinch of ground cinnamon.
  • Kosher salt.
  • ⅔ cup of full-fat yogurt.

How to Make Mishti Doi

Let’s get started! First, preheat your oven to 200°F (about 93°C), then turn it off and leave the light on to keep it warm.

Next, in a medium saucepan, combine the jaggery with 2 tablespoons of water. Bring the mixture to a boil over medium heat, then reduce to low heat and cook for about 3 minutes until it reaches 235°F (about 113°C).

Once the jaggery mixture has reached the right temperature, stir in the sweetened condensed milk and whole milk. Don’t forget to add a pinch of ground cardamom, cinnamon, and salt. Bring it to a boil over medium heat, then lower the heat and cook until the mixture thickens, about 35-38 minutes.

Setting and Chilling the Mishti Doi

When the mixture has thickened enough, turn off the heat and let it cool to about 110°F (around 43°C). While it cools, place the yogurt in a large bowl, then pour in ½ cup of the cooled milk mixture and mix until smooth.

Next, pour the yogurt mixture back into the remaining milk mixture and stir until well combined. Once done, transfer the mixture into a 1-quart clay pot or divide it into six small cups. Cover tightly with aluminum foil and place on a baking tray. Leave it in the oven (with the light still on) until it sets but remains slightly wobbly, about 36-48 hours.

Finishing Touches for Your Mishti Doi

Once your Mishti Doi is ready, you can refrigerate it for at least 2 hours or up to 4 days. Before serving, sprinkle a little jaggery on top and use a flame to caramelize the sugar layer. This caramel layer won’t be as crispy as traditional crème brûlée but will add a delightful roasted flavor to your dessert.
