Frillman dedicates his Thursdays to researching and developing new dishes. On a typical morning, he might be seen slicing a tuna fish to prepare a delightful tuna conserva. The fish is cooked in a blend of aromatic tea, then mixed with olive oil to enhance the dish's appeal.

But it’s not just about the fish; Frillman also crafts pasta with fresh clams from Massachusetts. He substitutes pink shrimp with small clams and collaborates with fellow chefs on ways to elevate the dish — like adding anchovy crumbs for an extra crunch.
