For the best results, slice the beef thinly, which can typically be found in Asian supermarkets. You can also look for it at stores like Costco or make your own by freezing a ribeye steak and slicing it thinly while it's firm but not fully frozen.

Selecting Your Udon Noodles

Fresh or frozen udon noodles are your best bet. Fresh noodles often contain preservatives like malic acid or lactic acid, which can affect the dish's flavor. If you only have fresh noodles, it's advisable to boil them separately to reduce any sourness. If fresh or frozen options are unavailable, you can still use dried noodles, but be sure to boil them separately to avoid a slimy broth.

How to Cook Beef Udon

Start by preparing the broth with 4 cups of water and dashi powder, keeping it on low heat to stay warm. In another pot, bring water to a boil for the noodles. Meanwhile, sauté the onions in oil until they soften, then add the beef and sugar, cooking until the beef is just done.

Add mirin, soy sauce, oyster sauce, and a bit of dashi water, simmering to create a thin sauce. For the remaining dashi broth, stir in mirin and soy sauce. Cook the noodles according to the package instructions, then gradually pour the dashi broth into two bowls, topping each with the beef and green onions.
