Tucked away in a small corner of Newhaven harbor in Edinburgh, Norah, a all-day eatery, radiates a friendly vibe that fits seamlessly with its surroundings. Although it has only been open for less than a year, it has made an impression akin to that of a long-established restaurant, thanks to its confidence and clear sense of mission.

Here, you’ll find a perfect blend of authentic cuisine and a deep understanding of diners' needs. Behind the restaurant is the talented and passionate chef, Claire Hanrahan, who was honored with the Best New Restaurant award in the UK. Claire named the restaurant after her grandmother, Norah Hanrahan.

Heritage from Grandma

“Norah had a significant influence on me throughout my upbringing,” Claire shared during my visit. “I will never forget the times we baked apple pies together in the kitchen after school. She was not only a great cook but also a wonderful person. Naming the restaurant after her is not just a way to honor her but also an opportunity for me to showcase dishes that are tied to my childhood.”

Upon entering Norah, you immediately feel at home. “My grandmother had a strangely calming presence. If we can bring at least 10% of what she brought to us, then I feel successful,” Claire added.

Irish and Scottish Culinary Fusion

Norah opened its doors in Newhaven, Edinburgh in 2025, serving Irish dishes infused with local Scottish ingredients. Claire hails from Meath, just a 20-minute drive from Dublin. After studying Culinary Arts, she decided to relocate to Edinburgh to escape the soaring rents in Ireland’s capital. Here, Claire worked at several renowned restaurants, including Ardfern and The Palmerston.

Now, Norah has gained widespread recognition. “We don’t spend money on PR. We don’t have investors. Our goal was simply to create a place that people love. So, to be recognized so early on is truly crazy,” Claire shared.

Thoughtfulness and Love in Cuisine

What makes the restaurant appealing is the gentle confidence that, when cared for with intelligence and love, simplicity can be just as enticing as something completely new. Claire, alongside her business partner Andrew Ainslie, has built Norah together. Andrew handles the logistics while Claire leads the kitchen.

“I truly want it to be recognized. But above all, I want it to feel good for us and the team.” Norah is rooted in Irish culture, years of working alongside many other chefs, and the amazing ingredients available in Scotland, all perfectly blended in a cozy atmosphere.

A Flavor-Packed Menu

The menu at Norah is diverse, featuring dishes like smoked fish chowder, tartiflette served with mustard salad, and pork sausages with chips and eggs. Even more special, the breakfast menu combines Irish cheese with soda bread, a perfectly boiled egg, crunchy cucumbers, and a generous dollop of delicious butter.

The porridge has also become a favorite among regulars, finished with brown sugar and cooked to a creamy consistency. Scottish seafood is also highlighted at Norah, with every detail meticulously crafted by Chef Claire.

Success is Not the Final Destination

Norah is not just a personal project. Behind the restaurant's formation is a network of friends, family, and neighbors—parents tending to the front garden, friends helping paint walls, and assemble furniture. These collective efforts have shaped the restaurant's identity just as much as the food.

“I really want it to succeed,” Claire admits. “I don’t just want it to be recognized; I want people to feel comfortable working here.” Just shy of a year, Norah has started to reap its successes. There may be plans for a second location in the future, but Claire isn’t rushing until the timing feels right.

Changing the Culinary Culture

In an industry where women are often overlooked, Claire is candid about her role as a female chef and restaurant owner in Scotland. She hopes to create a more friendly working environment for women. “I think a lot about this. There are very few women in the industry with children. I can count them on one hand.”

Norah is Claire’s first restaurant, and she wants it to be a testament to a different model. “I want to build a place where if I want to have a family, that can happen. Or if someone working with us wants that, it can happen for them too.” This isn’t an abstract ambition. It involves structure and is a smart decision to build a business that can thrive with ambitious women in leadership roles.

A Bright Future

“We are pushing against outdated culinary culture,” Claire says. “Proving that there is another way.” Hospitality culture has long operated under pressure: long hours, rigid hierarchies, and stress viewed as a badge of honor. Claire does not wish to perpetuate that model. “People have lives outside of work,” she simply states. “We work to enjoy our free time. Work should not be more important than everything else.”

At Norah, the work schedule is built around real life—musicians, artists, weddings, and other commitments. This isn’t about lowering standards but redefining what strength in the kitchen means. “You can run a successful restaurant without making people feel exhausted,” she says. “That shouldn’t be revolutionary.”

In a culinary culture often focused solely on the new, this harbor-side restaurant stands firm in the present—reminding us that enduring places are not built on novelty but on memories, generosity, and love.
