The thick noodles, tender chicken, and the delightful flavors of cream, thyme, garlic, and vegetables made it impossible to resist. I'm not usually a big fan of regular chicken soup, but this one completely changed my perspective.


How to Make the Best Creamy Chicken Noodle Soup


Step 1: Sauté the Vegetables. Start with carrots, onions, and celery. After they soften, add in the garlic and thyme, and it feels like a little magic is happening!


Step 2: Add Broth and Noodles. Toss them into the pot and let it all simmer for a bit!


Step 3: Incorporate Chicken, Spinach, and Cream. You can choose to add spinach or leave it out, but I definitely prefer to include it!

  • 2-3 cups spinach leaves (optional)

  • 1 cup heavy cream

  • Parmesan cheese (freshly grated, for serving)


Step-by-Step Cooking Instructions


First, heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking for about 7-10 minutes until they soften and start to caramelize. Next, add the garlic, salt, and thyme, sautéing for about a minute until fragrant.


Then, add the broth and noodles to the pot, bringing it to a gentle simmer. Cook for about 10 minutes until the noodles are tender.

Once everything is done, turn off the heat and remove the thyme sprigs. Stir in the spinach, chicken, and cream, mixing well until everything is heated through and the spinach wilts a bit.
