Ingredients You’ll Need
First things first, let’s gather the ingredients! You’ll need about 1kg of pork ribs, but feel free to substitute with chicken or beef if you prefer. Additionally, you’ll want some kaffir lime leaves and a few other spices. What sets this curry apart is its spicy kick from dried chilies, and unlike many other Thai curries, it doesn’t require coconut milk.
Preparing the Curry Paste
The secret to the flavor of this dish lies in the curry paste. I truly believe all the deliciousness is concentrated here. Start by soaking the dried chilies to soften them, then blend them with garlic, shallots, and other spices like black pepper, fennel, salt, and shrimp paste.
