This month, I'm thrilled to invite you to participate in the April cooking challenge with Love & Lemons! It’s a fun way to try out a new dish and have the chance to win a prize. Joining is super easy—just follow the guidelines and leave a comment!
How to Participate
Each month, I’ll select a seasonal recipe for you to try. Make sure to sign up for the email list to get the latest updates when I share the recipe. Then, prepare the dish during the month and leave a comment on the recipe post. Don’t forget, the deadline is April 30th!
For an extra chance to win, you can send pictures of your dish to cookingclub@loveandlemons.com. Or post your photos on Instagram, just remember to tag @loveandlemons and #loveandlemonscookingclub!
Prizes
At the end of the month, I will randomly select a winner and share some of the photos you submitted. This month’s prize is a $100 Whole Foods gift card!
April Recipe: Chickpea Salad
The recipe I’m excited to share this month is a chickpea salad. It’s absolutely delightful with pickled onions, refreshing lemon dressing, and a mix of fresh herbs. This salad is perfect for a spring lunch and can be stored in the fridge for a few days if prepared in advance. Just remember to toss in the mint right before serving!

This salad is incredibly versatile—you can customize it with different herbs or veggies, and feel free to add feta cheese if you like. I’d love to hear your variations in the comments!

Last Month's Recipe
Last month, we made a breakfast casserole, perfect for busy brunch gatherings. Many of you shared your exciting twists… Irais used cauliflower instead of bell peppers and spinach, adding rosemary, sage, onion powder, and sumac. Adrienne combined sweet potatoes, peppers, and onions. Kim swapped in roasted veggies for the potatoes. Melina doubled the spinach and added Roma tomatoes and feta on top for a Mediterranean flair. Kristin made mini tacos for breakfast from the leftover casserole. (I’m definitely trying that!)
