Spring is here, and it's the perfect time to whip up this sweet, nutritious, and colorful asparagus soup!
Asparagus Soup: A Delightful Dish for Spring
With the weather warming up lately, I've decided to make a delicious pot of asparagus soup to welcome spring. This soup is light yet packed with nutrients, making it ideal for a weekend dinner. Honestly, I love pairing it with crispy bread or focaccia.
Ingredients for Asparagus Soup
To prepare this delightful soup, gather the following ingredients:
- 3 tablespoons unsalted butter
- 3 small to medium leeks, using only the white and light green parts
- 1¼ teaspoons sea salt
- Freshly ground black pepper
- 2 bunches of asparagus, cut into pieces
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 2 sprigs of fresh thyme
- 1 cup frozen peas
- 1½ tablespoons fresh lemon juice
- ¼ to ½ cup heavy cream (optional)
How to Make Asparagus Soup
Start by melting the butter in a large pot over medium heat. Add the leeks and cook for about 8 to 10 minutes until they are soft. Be sure to lower the heat if they start to brown, as that can create a bitter taste.
Next, add the garlic, asparagus, broth, and thyme to the pot. Simmer for about 20 minutes until the asparagus is tender. Finally, stir in the peas and cook for an additional 2 minutes until heated through.

Blend the Soup and Enjoy
To blend the soup, allow it to cool slightly before removing the thyme. Then, transfer everything to a blender and puree until smooth. If you prefer, you can use an immersion blender directly in the pot. Once blended, return the soup to the pot and add salt, lemon juice, and cream if desired.
This soup is typically served in a bowl, drizzled with a bit of olive oil, topped with cream, chives, or dill. I also love enjoying it with crispy bread or egg salad sandwiches for a light spring meal.
Storing Soup Tips
If you have leftover soup, store it in an airtight container in the refrigerator for up to 4 days. You can also freeze it! Make sure the soup cools completely before transferring it to a freezer-safe container, leaving some space at the top for expansion. The soup can be kept in the freezer for up to 3 months.
