Coconut Water vs. Coconut Cream: Know the Difference Before You Start

Before diving into the process, it's important to understand the distinction: coconut water is not the same as coconut cream. Coconut cream is the rich, thick liquid extracted from the first pressing of mature coconut flesh, while coconut water is the liquid extracted from the second pressing or a mixture of coconut cream and water.

Choose Mature Coconuts, Not Young Ones

To make delicious coconut milk, you need to select mature coconuts that have thick flesh, rather than young coconuts that are primarily used for drinking. Mature coconuts have a hard brown shell and thick white flesh inside. In Vietnam, mature coconuts are easy to find, but if you're abroad, be sure to check out your local Asian supermarket.

Essential Tools

  • A sharp knife or cleaver
  • A coconut grater
  • Two large bowls
  • 600 ml of room temperature water
  • A medium pot

How to Open a Coconut?

Find a spot where you don't mind making a mess to open your coconut. Use the back of the knife to chop firmly across the middle of the coconut until it splits in half. Make sure to chop gently and quickly, rotating the coconut to create an even crack. The coconut water inside is drinkable, but you won’t need it for this recipe.

Grate the Coconut Flesh

Using your grater, scrape out all the coconut flesh from the shell. The flesh should be white, light, and soft. Be careful not to dig too deep into the shell. Each coconut should yield about 300g of grated flesh.

Extracting Coconut Cream

Pour 300 ml of water over the grated coconut and gently squeeze it with your hands. The cloudy white liquid that collects in the bowl is your coconut cream. Strain this mixture through a cloth or sieve to collect the thick coconut cream.

Making Coconut Milk

After extracting the cream, add another 300 ml of water to the remaining grated coconut, mix it well, and squeeze again to get your coconut milk. Strain it through a sieve one more time to ensure a smooth consistency. From one coconut, you can expect to yield between 500-600 ml of both coconut cream and milk.

Using Your Homemade Coconut Milk in Thai Dishes

In Thai cuisine, fresh coconut milk is an essential ingredient. Try incorporating this homemade coconut milk into your green curry, and you’ll immediately notice the difference in taste. Of course, if you're short on time, you can opt for canned coconut milk, but if you have the time to spare, making it yourself will take your dishes to the next level.
