But regardless of the hard work involved, the warmth of success shines through in the way Amanda and her partner, Claudia Mena, serve their customers.

A Culinary Journey from the Kitchen

Born in Matanzas, Cuba, Amanda grew up in a family that cherished food. Her grandmother, Mirta, always prepared delicious meals for the whole family, from carne frita to traditional pork noodles. Even in times of scarcity, Mirta managed to ensure everyone had a full belly. Growing up in that environment, Amanda learned that cuisine is not just about food; it’s about culture and creativity.

At the age of 18, Amanda left Cuba for the U.S., where she began to explore a variety of Latin dishes. Although she never envisioned herself becoming a chef, life pushed her into the culinary world. Her experiences working in Salvadoran and Cuban restaurants enriched her culinary knowledge. She started to discover and refine 'hard-to-find' Cuban dishes from her homeland, such as ropa vieja.

However, it was during the COVID-19 pandemic that Amanda truly found her love for cooking.
